Recipe: Bacon and Shrimp Bow Tie

Since things are as busy as usual here, I am posting a recipe for what we are having for dinner tonight. The whole family loves it and it goes together in a jiffy! Enjoy…. Hope you are enjoying busy spring days too. 🙂

BACON AND SHRIMP BOW TIE (serves 8-10)

  • 8 slices of bacon cooked until crisp
  • 18 oz. bow tie pasta – or any shape that tickles your fancy
  • 8 oz. baby spinach leaves OR 2 cups broccoli flowerets
  • 1 – 1 1/2 pounds medium shrimp (I like to use frozen raw and deveined without the tail, but cooked will work fine. If using cooked just place in the water long enough to warm through.)
  • 28-32 oz. of garlic alfredo sauce
  • 1 cup diced tomatoes (I used drained canned tomatoes most of the time.)

After the bacon is crisp, set it aside to cool a bit. When cool break into bite size pieces.

 Boil the pasta until almost done and then add the shrimp to the pot.  Cook until the shrimp is just done and add the spinach. (If you use broccoli, add it a few minutes before the shrimp is done.)

While the pasta cooks, stir the tomatoes into the alfredo sauce in a saucepan and place over medium heat until heated through.

Drain the pasta, shrimp and vegetable mixture and place on a very large platter or serving bowl. Pour the sauce over and give it a toss. Sprinkle with bacon bits. Ta-da!
